RED WINE AND MUSHROOM SAUCE

This is the perfect sauce to serve with Stuffed Chicken rolls (or Turkey rolls) at Christmas time..it is festive in color and taste! You can replace the Mushroom sauce with this recipe. It is also lovely with any roasted meats such as Perfect Roast Pork or any roast beef.

NEED:
1 cup fresh mushrooms sliced
1 tablespoon plum jam
1 brown onion diced finely
chicken stock
cream
red wine to taste
salt and pepper

DO:
Quickly fry in dry pan mushrooms, onion on Induction 8.
Add plum jam, stock and wine.
Bring to the boil and reduce.
Just before serving add dash of cream.
Can add freshly cracked salt and pepper at this point to taste.
Serve immediately.
